Slender-doodles: A reduced-calorie recipe makeover of snickerdoodles

Makes 4 dozen

6 tablespoons butter, softened

1 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon nutmeg

1/4 teaspoon baking soda

1/3 cup fat-free sour cream

1 egg, lightly beaten

1 teaspoon vanilla

2 cups all-purpose flour

Nonstick cooking spray

For dusting

2 tablespoons brown sugar

1 tablespoon granulated sugar

2 teaspoons cinnamon

1. In a large bowl, beat butter with an electric mixer on medium speed for 30 seconds. Add 1 cup of granulated sugar, baking powder, nutmeg and baking soda. Beat until combined, scraping bowl as needed. Beat in sour cream, egg and vanilla. Add flour gradually, beating between additions. Cover and chill dough for 1 to 2 hours, or until easy to handle.

2. Heat oven to 375 degrees. Lightly coat cookie sheets with cooking spray. Into a small bowl, sift the brown sugar, 1 tablespoon granulated sugar and 2 teaspoons cinnamon. Shape dough into 1-inch balls and roll each in the sugar-cinnamon mixture to coat. Place balls about 2 inches apart on prepared cookie sheets.

3. Bake for 10 to 11 minutes, or until edges are light brown. Place cookies on a wire rack to cool completely.
